Avocado Bacon Bites (Print Version)

Crunchy bites packed with flavorful avocado, bacon, creamy cheese, and seasonings. Awesome for entertaining or casual snacking.

# Ingredients:

01 - 2 cups panko crumbs.
02 - 1 cup shredded pepper jack cheese.
03 - 1 cup shredded cheddar, sharp.
04 - Half a cup of fresh cilantro, chopped.
05 - 1/4 cup of chopped red onion.
06 - 3 large avocados, diced into small chunks.
07 - 8 ounces cream cheese, softened.
08 - 1 teaspoon of lime juice.
09 - 1/2 cup pickled jalapeños, roughly chopped.
10 - Vegetable oil for frying.
11 - 1/2 teaspoon black pepper.
12 - 1 teaspoon garlic salt.
13 - 1/2 teaspoon Cajun spice mix.
14 - 1/2 a cup of green onions, sliced thinly.
15 - 1 large egg.
16 - 1 cup of flour.
17 - 1 cup of buttermilk.
18 - 1 pound of crispy, cooked bacon.

# Steps:

01 - Fry the bacon in a wide skillet till crunchy. Lay it on paper towels to cool, then crumble into bits.
02 - Blend cream cheese until it's creamy. Combine with bacon, cheddar, pepper jack, scallions, red onion, jalapeños, cilantro, and spices. Gently stir in avocado at the end.
03 - Wrap the bowl with plastic and keep in the fridge for an hour or until it's firm.
04 - Place breadcrumbs in one dish, beaten egg with buttermilk in another, and flour in a separate small bowl.
05 - Scoop and roll the filling into small balls. Dust them with flour, dip in the egg mix, and roll in breadcrumbs till fully coated.
06 - Spread the coated bites on a tray and freeze them for an hour so they hold their shape.
07 - Heat oil to 350°F in a deep pot. Fry in small batches for about 2 minutes, turning to brown evenly.
08 - Using a slotted spoon, take them out. Let them drain on paper towels, then enjoy while still hot.
