Bring a large pot of salted water to a boil. Add the spaghetti and cook until al dente, according to package instructions. Reserve 1 cup of pasta water and then drain the pasta.

Heat a large skillet over medium heat. Add the chopped bacon and cook until crispy. Remove the bacon and set it aside on a paper towel-lined plate. Leave about 2 tablespoons of the rendered bacon fat in the skillet.

In a mixing bowl, whisk together the eggs, Parmesan cheese, and black pepper. Set aside.

Add the drained pasta to the skillet with the bacon fat. Toss to coat the pasta evenly.

Turn off the heat and quickly pour the egg mixture over the pasta. Stir vigorously to coat the pasta and create a creamy sauce. Add reserved pasta water, a little at a time, until the sauce reaches your desired consistency.

Stir the crispy bacon pieces back into the pasta. Serve immediately, garnished with additional Parmesan and black pepper if desired.
