01 - 10 dark meat chicken pieces (drumsticks and thighs), trimmed of excess fat
02 - 2 tsp kosher salt
03 - 1 tbsp smoked paprika
04 - 1 tbsp chicken seasoning blend (e.g., Montreal chicken seasoning or bouillon)
05 - 2 tbsp butter
06 - 1/2 cup red onion, minced
07 - 1/2 cup flat-leaf parsley, chopped
08 - 1 tbsp garlic, minced
09 - 1/2 tsp red pepper flakes
10 - 1 cup chicken stock
11 - 1 tbsp fresh lemon juice
12 - 1 cup freshly grated Parmesan cheese
13 - 1/3 cup heavy whipping cream

# Steps:

01 - In a skillet, melt butter over medium heat. Once melted, add onions and sauté until fragrant, about 2 minutes.
02 - To the onions, add chopped parsley, garlic, and lemon juice. Mix well and add red pepper flakes.
03 - Add chicken stock followed by Parmesan cheese. Mix thoroughly and then add heavy cream. Bring to a simmer for one minute, then turn off the heat and let the sauce cool slightly.
