Balsamic Chicken Skillet (Print Version)

# Ingredients:

→ Sauce

01 - 2 tablespoons oil (olive or avocado)
02 - ⅓ cup balsamic vinegar
03 - 1 teaspoon Italian seasoning
04 - 2 tablespoons honey
05 - 1 tablespoon Dijon mustard
06 - 2 cloves garlic, finely chopped

→ Tomato Mozzarella Topping

07 - 2 tablespoons fresh basil, finely minced
08 - 8 ounces fresh mozzarella balls
09 - 8 ounces grape tomatoes, sliced in half

→ Chicken

10 - 2 tablespoons avocado oil
11 - Kosher salt and freshly ground pepper
12 - 2 pounds boneless chicken breasts, thinned to an even size

# Instructions:

01 - Mix together Dijon mustard, honey, balsamic vinegar, garlic, seasoning, and oil. Add salt and pepper to taste.
02 - Mix together basil, chopped tomatoes, and mozzarella. Sprinkle in a little salt and pepper.
03 - In a hot skillet with oil, brown the chicken on each side for just a minute or two.
04 - Pour the balsamic mixture into the pan and scrape up the flavorful bits. Spread the tomato topping over the chicken.
05 - Bake in your oven for 18 to 23 minutes at 400°F. Let it rest for about 5 minutes before eating.

# Notes:

01 - Slice bigger mozzarella balls if needed.
02 - Flattening your chicken helps it cook evenly.
