Sticky Beef Noodles (Print Version)

# Ingredients:

01 - 1 lb (450g) flank steak or sirloin, sliced thinly
02 - 8 oz (225g) lo mein noodles, udon, or rice noodles
03 - 3 tbsp vegetable oil, divided use
04 - 2 tbsp cornstarch
05 - 2 cups (120g) broccoli florets
06 - 1 red bell pepper, sliced into thin strips
07 - 2 garlic cloves, finely minced
08 - 3 green onions, chopped (save some extra for topping)
09 - 1 tbsp grated fresh ginger

→ Sticky Sauce Mix

10 - 1/4 cup (60ml) soy sauce
11 - 2 tbsp hoisin sauce
12 - 2 tbsp honey, or sub with brown sugar
13 - 1 tbsp sesame oil
14 - 2 tbsp rice vinegar, or try lime juice
15 - 1/4 tsp red pepper flakes if you want spice (optional)

# Instructions:

01 - Prepare your noodles the way the package tells you. Once they’re good to go, drain them and leave them on standby for later.
02 - Toss the sliced beef in cornstarch until it’s lightly coated. Heat 2 tablespoons of oil in a big pan or wok until it’s really hot, then spread the beef out in a single layer. Let it cook 2-3 minutes per side until it’s beautifully browned. Pull it out and set aside.
03 - Use the same pan without cleaning it and add the rest of the oil. Throw in broccoli and bell peppers, giving everything a quick stir-fry for 4-5 minutes until the veggies brighten up and are just slightly soft.
04 - Pop in garlic, ginger, and most of the green onions. Stir fry everything for another 1-2 minutes until your kitchen starts smelling amazing.
05 - Quickly mix together soy sauce, hoisin sauce, honey, rice vinegar, sesame oil, and red pepper flakes if you’re in the mood for a bit of heat. This is your sweet ’n sticky goodness that ties it all together.
06 - Toss the cooked noodles and beef back into the pan along with the veggies. Pour that lovely sauce over everything and stir it all together till the noodles and beef are saucy and glistening.
07 - Spoon onto plates or bowls while still warm. Sprinkle a few extra green onion slices on top for flavor and a fresh kick before serving.

# Notes:

01 - To make it gluten-free, choose GF soy sauce and stick to rice noodles.
02 - Don’t be shy about changing up the veggies—snap peas, baby corn, or carrots would work great.
03 - Store leftovers in the fridge for up to 3 days, and reheat in a skillet or microwave when ready to munch again.
