# Ingredients:

→ Beef and Seasoning

01 - 1 ½ lbs sirloin tips, cut into 1-inch cubes
02 - 3 tablespoons flour
03 - 3 tablespoons olive oil
04 - 1 teaspoon brown sugar
05 - ¼ teaspoon black pepper
06 - ½ teaspoon salt
07 - ½ teaspoon garlic powder
08 - ½ teaspoon onion powder
09 - ½ teaspoon chili powder
10 - ½ teaspoon paprika

11 - ¼ cup dry red wine (optional)
12 - 2 tablespoons butter
13 - 1 small yellow onion, diced
14 - 3 cloves garlic, minced
15 - 2 cups beef broth
16 - 1 beef bouillon cube
17 - 1 ½ teaspoons Worcestershire sauce
18 - ¼ teaspoon dried thyme
19 - ¼ teaspoon dried rosemary
20 - 1 teaspoon onion powder
21 - ½ teaspoon garlic powder
22 - 3 tablespoons cornstarch
23 - ¼ cup cold water

# Steps:

01 - Combine beef seasoning mix. Cut meat into 1-inch cubes, discarding large pieces of fat. Sprinkle beef seasoning over the meat and toss to coat. Add flour and toss again.
02 - Heat 3 tablespoons of olive oil in a large skillet over medium-high heat. Add the meat in batches, browning each side for 30-45 seconds without overcrowding. Transfer to a plate and repeat with remaining beef.
03 - Deglaze the pan with ¼ cup of red wine, scraping up browned bits with a silicone spatula. Let the wine reduce by half over gentle heat.
04 - Reduce heat to medium and add butter and onions to the pan. Cook for 5 minutes until softened. Add garlic and cook for 1 minute.
05 - Add all remaining gravy ingredients except the cornstarch mixture to the pan. Bring to a boil.
06 - Combine cornstarch and cold water in a small bowl. Gradually whisk into the gravy, stirring continuously until desired consistency is reached.
07 - Reduce heat to medium-low. Add seared beef and juices to the pan. Cover partially and cook for 10-15 minutes until beef is fully cooked.
08 - For a velvety finish, optionally stir in 1 tablespoon of cold butter before serving.
09 - Pair beef tips and gravy with mashed potatoes, egg noodles, or rice.
