Beef Tortellini Enchilada (Print Version)

Mix soft tortellini with flavored beef and bold enchilada sauce, then melt cheese on top. Add sour cream for a creamy finish!

# Ingredients:

→ Pasta and Protein

01 - 1 pound ground beef
02 - 9 ounces cheese tortellini

→ Vegetables and Aromatics

03 - 2 minced garlic cloves
04 - 1 small chopped onion

→ Seasonings

05 - 1 teaspoon paprika
06 - 1 tablespoon chili powder
07 - 1 teaspoon cumin powder
08 - 1/2 teaspoon ground pepper
09 - 1/2 teaspoon salt

→ Sauce and Cheese

10 - 10-ounce can of enchilada sauce (green or red works)
11 - 1/4 cup sour cream
12 - 1 cup shredded cheddar
13 - 1 cup mozzarella, grated

→ Garnish

14 - Chopped fresh cilantro leaves

# Steps:

01 - Follow package instructions to cook tortellini. Drain and leave it aside.
02 - In a big pan, cook the ground beef over medium heat. Break it up as it browns. Get rid of extra grease.
03 - Add garlic and onion into the beef and let them cook for about 2-3 minutes until the onions soften.
04 - Sprinkle chili powder, cumin, paprika, salt, and pepper over the mixture. Stir and cook for another minute to wake up the flavors.
05 - Mix in the enchilada sauce and let it simmer for 5 minutes. Toss in the tortellini and stir until fully coated.
06 - Sprinkle cheddar and mozzarella on top. Lower the heat, cover, and let the cheese melt for 2-3 minutes.
07 - Take it off the heat, mix in sour cream, and top with cilantro. Serve right away while it's warm.
