Follow package instructions to cook tortellini. Drain and leave it aside.

In a big pan, cook the ground beef over medium heat. Break it up as it browns. Get rid of extra grease.

Add garlic and onion into the beef and let them cook for about 2-3 minutes until the onions soften.

Sprinkle chili powder, cumin, paprika, salt, and pepper over the mixture. Stir and cook for another minute to wake up the flavors.

Mix in the enchilada sauce and let it simmer for 5 minutes. Toss in the tortellini and stir until fully coated.

Sprinkle cheddar and mozzarella on top. Lower the heat, cover, and let the cheese melt for 2-3 minutes.

Take it off the heat, mix in sour cream, and top with cilantro. Serve right away while it's warm.
