Black Bean Sweet Potato (Print Version)

Comfort food with sweet potatoes and black beans, cooked with smoky flavors. Great for cold nights!

# Ingredients:

→ Main Base

01 - 1 chopped onion
02 - 1 tbsp olive oil
03 - 2 minced garlic cloves

→ Veggies and Beans

04 - 1 red bell pepper, diced
05 - 1 peeled and cubed sweet potato
06 - 1 can (14 oz) rinsed black beans
07 - 1 can (14 oz) diced tomatoes

→ Broth & Flavorings

08 - 1 tsp ground cumin
09 - 1 tbsp chili powder
10 - Salt and black pepper as needed
11 - 1 tsp smoky paprika
12 - 1 cup veggie stock

→ Toppings

13 - Chopped cilantro

# Steps:

01 - In a big pot on medium heat, warm up the oil. Toss in the onion and garlic, and cook for about 3-4 minutes until they soften.
02 - Throw in the bell pepper and sweet potato, then stir around for about 5 minutes.
03 - Mix in the black beans, tomatoes, broth, and spices. Turn the heat up and let it start to bubble.
04 - Lower the heat and let it simmer for 20-25 minutes, stirring every now and then until the sweet potato softens.
05 - Sprinkle some fresh cilantro over the top and enjoy it while warm.
