Spinach Salmon (Print Version)

Juicy salmon with cheesy spinach inside and a kick of blackened spices on top.

# Ingredients:

→ Filling

01 - 1 cup cream cheese (let it get soft)
02 - 1 tablespoon olive oil
03 - 2 cups spinach leaves
04 - 1 cup Parmesan, shredded
05 - 2 garlic cloves, chopped

→ Salmon

06 - Four 6-ounce salmon pieces

→ Serving

07 - Wedges of lemon

→ Blackening Seasoning

08 - Dash of salt and black pepper
09 - 1 teaspoon onion powder
10 - 1 teaspoon garlic powder
11 - 1 teaspoon cayenne powder
12 - 1 teaspoon smoky paprika

# Steps:

01 - Pop salmon in the oven and bake until it’s tender and flakes easily, about 15 to 20 minutes.
02 - Set your oven to 375°F and oil a baking tray.
03 - Combine blackening spices and coat salmon all over.
04 - Cook chopped garlic with spinach in olive oil till limp, let cool, then mix with soft cream cheese and Parmesan.
05 - Spoon spinach and cheese blend into every cut pocket.
06 - Cut a sideways pocket into each chunk of salmon.

# Helpful Notes:

01 - Don’t want it super spicy? Use less cayenne.
02 - Frozen spinach works fine—just thaw and squeeze out water.
03 - Skip the oven and grill each one for 6-8 minutes on each side instead.
