Blue Monster Cookies (Print Version)

Cheerful blue cookies filled with chocolate and crunchy cookie pieces. They’re soft, chewy, and so easy to make!

# Ingredients:

→ Cookie Base

01 - 3 cups (360g) of plain all-purpose flour
02 - 1 teaspoon of baking soda
03 - 2 teaspoons of cornstarch
04 - 1/4 teaspoon of salt
05 - 2 sticks (1 cup) of butter, unsalted and softened to room temperature
06 - 1 and 1/4 cups of packed brown sugar
07 - 1/4 cup of regular white sugar
08 - 2 large eggs, brought to room temperature
09 - 1 teaspoon of vanilla extract
10 - Gel food dyes in royal blue, deep blue, and purple shades

→ Mix-ins

11 - 2/3 cup of white chocolate chips, split
12 - 2/3 cup of crushed Oreo cookies
13 - 2/3 cup of chopped mini Chips Ahoy cookies

# Steps:

01 - Preheat your oven to 350°F. Place a silicone mat or parchment paper on the cookie sheet. In a bowl, combine the flour, baking soda, cornstarch, and salt.
02 - Whip together the butter and both types of sugar for 2 minutes until it looks pale and fluffy. Add in the eggs and vanilla extract, beating for an extra 30 seconds. Slowly mix in the dry ingredients on a low setting.
03 - Combine the gel food colors until you get that rich blue shade you want. Gently fold in half of the white chocolate chips and cookie pieces. Keep the rest aside for topping later.
04 - Scoop out about 2 tablespoons of dough for each cookie and roll them into smooth balls. Press the leftover white chocolate chips and cookie chunks onto the surface of the dough balls.
05 - Bake no more than eight cookies on one sheet for about 10 to 12 minutes. Take them out before the edges turn fully golden. Let them rest on the tray for 15 minutes before transferring elsewhere to cool.
