Soft Pretzel Bites (Print Version)

# Ingredients:

01 - 1 package (0.25 oz) active dry yeast.
02 - 1 tablespoon brown sugar.
03 - 1½ cups of milk, slightly warmed (around 110-115°F).
04 - 4½ cups plain all-purpose flour.
05 - 2 tablespoons butter, melted, with extra for brushing later.
06 - 1 teaspoon fine salt.
07 - 9 cups tap water.
08 - ⅓ cup baking soda.
09 - 1 large egg beaten with a tablespoon of water.
10 - Coarse salt for sprinkle-topping.

# Instructions:

01 - Stir sugar into milk, scatter yeast on top, and wait until it’s bubbly (about 5 minutes).
02 - Mix flour, melted butter, and salt together; knead either by hand or with a mixer for about 4 minutes until smooth and elastic.
03 - Cover dough in an oiled bowl and leave for 20–30 minutes to double in size.
04 - Preheat oven to 450°F and simmer a mixture of water and baking soda on the stove.
05 - Cut the dough into 12 parts, shape into thin ropes, then chop those into small, bite-sized chunks.
06 - Drop the dough bites into the baking soda water for 30 seconds per batch.
07 - Brush tops with the egg mixture, sprinkle coarse salt, and bake for 12-14 minutes until the tops are golden brown.

01 - Tastes best warm, so enjoy the same day!
02 - Try brushing extra butter on top after baking for more flavor.
03 - Only boil in small amounts to avoid overcrowding.
