Quick Ramen Carbonara (Print Version)

A speedy mix of ramen noodles and rich carbonara flavors.

# Ingredients:

→ Base

01 - 4 slices diced bacon
02 - 3/4 cup onion, chopped
03 - 2 minced garlic cloves
04 - 3 packs of ramen noodles

→ Sauce

05 - 1/2 teaspoon of salt
06 - 1 cup parmesan cheese, shredded
07 - Pinch of crushed red pepper
08 - 2 eggs, large

→ Add-ins

09 - A handful of chopped fresh parsley
10 - 3/4 cup frozen peas

# Steps:

01 - Crisp up the bacon in a pan for 6-7 minutes, then set it aside. Save the grease.
02 - Use the bacon grease to sauté the garlic and onion for about 4-5 minutes, until they soften.
03 - Boil the ramen (skip the seasonings) and toss in frozen peas during the last minute. Save 3/4 cup pasta water before draining.
04 - Mix the eggs, parmesan, onion, bacon fat, salt, and some red pepper flakes in a bowl.
05 - While the noodles are still hot, stir them into the sauce. Gradually mix in the saved water, bacon, and garnish with parsley.

01 - Grate your parmesan fresh for better flavor
02 - Pancetta works as a good bacon swap
03 - Slowly mix eggs into hot liquid so they don’t scramble
