A bold, cheesy pizza topped with spiced cauliflower and finished with basil for a lighter, flavorful meal.

# Ingredients:

→ Vegetables

01 - 1 head cauliflower, cut into florets
02 - 2 shallots, sliced

→ Spices and Seasonings

03 - 2 tablespoons extra virgin olive oil
04 - 1 tablespoon smoked paprika
05 - 1-2 teaspoons chili flakes
06 - 1 teaspoon fennel seeds
07 - 1 teaspoon mustard seeds
08 - 1 teaspoon onion powder
09 - 1 teaspoon garlic powder
10 - Kosher salt, to taste

→ Base and Cheese

11 - ½ pound pizza dough, at room temperature
12 - 1 cup marinara sauce
13 - ¾ cup shredded mozzarella cheese
14 - ¾ cup shredded provolone cheese
15 - ¼ cup grated parmesan cheese

# Steps:

01 - Preheat the oven to 425°F. On a baking sheet, toss together the olive oil, cauliflower, smoked paprika, chili flakes, fennel seeds, mustard seeds, onion powder, garlic powder, and kosher salt. Add the sliced shallots. Toss well to evenly coat. Roast in the oven for 15-20 minutes, or until tender.
02 - Rub a large baking sheet with olive oil. Increase the oven temperature to 450°F.
03 - On a lightly floured surface, roll or push the dough out until it forms a thin 10-12 inch circle. Transfer the dough to the prepared baking sheet.
04 - Spread marinara sauce evenly over the dough. Sprinkle shredded mozzarella, provolone, and grated parmesan cheeses over the sauce. Arrange the roasted cauliflower and shallots on top of the cheese.
05 - Bake for 10-15 minutes, or until the crust is golden brown and the cauliflower is crisp. Remove the pizza from the oven, garnish with fresh basil, slice, and serve.

# Helpful Notes:

01 - For a low-carb option, consider using cauliflower crust instead of pizza dough.
