Preheat the oven to 425°F. On a baking sheet, toss together the olive oil, cauliflower, smoked paprika, chili flakes, fennel seeds, mustard seeds, onion powder, garlic powder, and kosher salt. Add the sliced shallots. Toss well to evenly coat. Roast in the oven for 15-20 minutes, or until tender.

Rub a large baking sheet with olive oil. Increase the oven temperature to 450°F.

On a lightly floured surface, roll or push the dough out until it forms a thin 10-12 inch circle. Transfer the dough to the prepared baking sheet.

Spread marinara sauce evenly over the dough. Sprinkle shredded mozzarella, provolone, and grated parmesan cheeses over the sauce. Arrange the roasted cauliflower and shallots on top of the cheese.

Bake for 10-15 minutes, or until the crust is golden brown and the cauliflower is crisp. Remove the pizza from the oven, garnish with fresh basil, slice, and serve.
