Beef Cheddar One-Pot (Print Version)

# Ingredients:

01 - 1 tbsp olive oil
02 - 1 lb ground beef
03 - 1 small onion, chopped finely
04 - 2 cups shredded cheddar cheese
05 - 1 packet ranch seasoning blend (1 oz)
06 - 8 oz pasta (such as penne or rotini)
07 - 2 cups beef stock
08 - 1 cup milk
09 - Salt and pepper as needed

# Instructions:

01 - Once you’ve turned off the heat, toss in the cheddar and stir it around until it’s all melted into a creamy sauce.
02 - Sprinkle however much salt and pepper feels good. Dish it up while it’s warm.
03 - Pour in the beef stock, milk, pasta, and seasoning blend. Let it reach a boil, then cover and simmer till the pasta’s soft—this should take about 10-12 minutes. Stir every now and then.
04 - Put some olive oil in a big pot over medium heat. Mix in the onions and beef, breaking the meat apart as it cooks. When the beef’s browned and onions look soft, drain off the extra grease.

01 - Want more flavor? Toss on some fresh parsley or sliced green onions.
02 - Ground chicken or turkey works great if you want something lighter.
03 - Go easy or heavy on the cheddar, depending on how cheesy you like it.
