Rinse your berries, make sure they're dry, and cut off the tops. Scoop out the centers but don’t pierce through the bottoms.

Whip the cream cheese until it’s creamy. Add powdered sugar and vanilla, then blend until everything’s light and airy.

Spoon or pipe the cheesecake mixture into the strawberries, letting a bit of it sit above the edges.

Dust the tops with graham cracker crumbs. If you'd like, sprinkle on nuts, sprinkles, or drizzle melted chocolate.

Pop them in the fridge for at least half an hour so everything firms up before serving.
