Cheesy Flatbread Keto (Print Version)

Tender, cheesy flatbreads made with almond flour and cottage cheese. Great for keto and low-carb diets!

# Ingredients:

→ Seasonings

01 - Fresh herbs for decoration, if you like
02 - Some salt and pepper—adjust the amount to your taste
03 - A tablespoon of olive oil, plus more if needed for cooking
04 - A pinch (¼ teaspoon) of both garlic and onion powders

→ Base Ingredients

05 - 1½ cups of almond flour
06 - 2 large eggs (room temp works best)
07 - 1 cup of cottage cheese, either full-fat or reduced-fat works
08 - 1 teaspoon of baking powder

# Steps:

01 - Start by warming a non-stick pan on medium heat. Add some olive oil to coat the surface evenly.
02 - Mix the eggs with the cottage cheese until they're smooth. Toss in the almond flour, baking powder, and seasonings. Stir until you get a thick batter.
03 - Use ¼ cup of batter at a time, pouring it into the pan and spreading it into a roundish shape. Let it cook for roughly 3-4 minutes per side till it looks golden.
04 - Keep going with the rest of your batter, adding more oil as needed. Add herbs on top at the end if you'd like, and enjoy them warm!
