Cheesy Sourdough Breadsticks (Print Version)

# Ingredients:

01 - 1 teaspoon sugar.
02 - 1/2 teaspoon Italian seasoning.
03 - 1 cup shredded mozzarella.
04 - 1/4 teaspoon black pepper.
05 - 1 tablespoon olive oil.
06 - 1/4 cup warm water.
07 - 1 teaspoon garlic salt.
08 - 1 teaspoon active dry yeast.
09 - 1/2 teaspoon dried oregano.
10 - 2 tablespoons melted butter.
11 - 1/2 teaspoon dried parsley.
12 - 2 1/4 cups all-purpose flour.
13 - 1/2 teaspoon garlic powder.
14 - 1/4 teaspoon salt.
15 - 1 cup grated parmesan cheese.
16 - 1/2 cup sourdough discard.

# Instructions:

01 - Stir yeast, sugar, and warm water in the stand mixer's bowl. Wait until foamy, about 5 minutes.
02 - Combine sourdough discard, garlic salt, and oil. Slowly add flour and knead with the dough hook for 4 minutes till it's smooth.
03 - Put dough into a bowl, cover with plastic wrap, and let it sit in a warm spot for 20 minutes.
04 - On a floured surface, roll out the dough into a rectangle. Move it to an oiled 13x18 baking pan and push it into the edges.
05 - Spread on melted butter. Combine seasonings and sprinkle over. Layer with parmesan and mozzarella cheeses.
06 - Let it rise for another 15 minutes while you preheat the oven to 400°F.
07 - Put the pan on the bottom oven rack and bake for 15-20 minutes until crispy. Move to the middle rack in the last 2 minutes if you want more browning.
08 - Cut the baked bread lengthwise first, then slice into 12 strips on each side to get 24 breadsticks. Enjoy with your favorite dips like ranch or marinara!

# Notes:

01 - Switch up the herbs or cheese and make it your own.
02 - Putting the pan on the lowest rack makes the bottom extra crisp.
03 - A clever way to use leftover sourdough discard.
