Chewy Strawberry Bars (Print Version)

# Ingredients:

→ Brownies

01 - 1 3/4 cups (219g) all-purpose flour
02 - 3/4 cup (168g) unsalted butter, cut into chunks
03 - 3/4 teaspoon salt
04 - 8 oz (226g) chopped white chocolate bars
05 - 1 tablespoon vanilla extract
06 - 2 egg yolks
07 - 2 eggs
08 - 2 1/2 cups (50g) freeze-dried strawberry pieces
09 - 1 1/4 cups (250g) sugar

→ Icing

10 - 2 cups (270g) powdered sugar
11 - 1/4 cup (5g) crushed freeze-dried strawberries
12 - 2-3 tablespoons whole milk

# Instructions:

01 - Set oven to 350°F. Line a 9x9 dish with parchment and grease it up.
02 - Gently heat butter and white chocolate in a double boiler, stirring to combine.
03 - Whisk together eggs, yolks, sugar, and vanilla until it’s light in color. Stir in your melted chocolate mix.
04 - Sprinkle in salt and flour, folding them gently. Grind the strawberries and mix those in too.
05 - Spread the batter into your prepared pan. Bake 28-31 minutes, then let it cool all the way.
06 - Combine powdered sugar, milk, and crushed strawberries. Pour it over your cooled brownies and wait for it to set before slicing.

01 - Opt for good-quality white chocolate for the best flavor.
02 - Grind the freeze-dried strawberries right before using them to keep things fresh.
03 - Don't add icing until the brownies have completely cooled off.
