Chicken Jambalaya Cajun Style (Print Version)

A savory, meaty one-pot dish with chicken, sausage, tomatoes, rice, and a kick of Cajun flavor.

# Ingredients:

01 - 3/4 pound boneless skinless chicken breasts, cubed
02 - 3 cups reduced-sodium chicken broth
03 - 1-1/2 cups uncooked brown rice
04 - 4 ounces reduced-fat smoked turkey sausage, diced
05 - 1/2 cup thinly sliced celery with leaves
06 - 1/2 cup chopped onion
07 - 1/2 cup chopped green pepper
08 - 2 to 3 teaspoons Cajun or Creole seasoning
09 - 1 to 2 garlic cloves, minced
10 - 1/8 teaspoon hot pepper sauce
11 - 1 bay leaf
12 - 1 can (14-1/2 ounces) no-salt-added diced tomatoes, undrained
13 - Chopped green onions (optional)

# Steps:

01 - In a large skillet lightly coated with cooking spray, saute chicken for 2-3 minutes or until chicken is no longer pink.
02 - Stir in chicken broth, brown rice, turkey sausage, celery, onion, green pepper, Cajun or Creole seasoning, garlic, hot pepper sauce, and bay leaf. Bring to a boil.
03 - Reduce heat; cover and simmer for 50-60 minutes or until heated through.
04 - Stir in diced tomatoes; cover and simmer 10 minutes longer or until liquid is absorbed and rice is tender.
05 - Remove from heat; let stand for 5 minutes. Discard bay leaf before serving.
06 - Serve with chopped green onions if desired.
