01 - 1/2 medium onion, diced small
02 - 2 cloves garlic, finely chopped
03 - 1 cup dry orzo pasta
04 - 1 tablespoon olive oil
05 - 2 tablespoons butter
06 - 2.5 cups chicken or veggie stock

07 - 1 (5.2 oz) block creamy Boursin cheese, at room temp
08 - 2 cups shredded or diced cooked chicken
09 - 2 cups fresh baby spinach, tightly packed
10 - Chopped fresh chives (for sprinkling)
11 - Salt and pepper for seasoning

# Steps:

01 - Melt the oil and butter together over medium heat. Toss in the onion, stirring for 3-4 minutes until it softens.
02 - Mix in the garlic and orzo, cooking for a couple of minutes. Stir around so the pasta gets a little toasted and fragrant.
03 - Pour the broth in gradually and bring it to a low boil. Stir here and there for 10 minutes. Lower the heat if it starts bubbling too much.
