Preheat oven to 400°F for toasting the buns.

Heat a large sauté pan over medium-high heat. Add the lean ground chicken and crumble it as it cooks.

Add diced yellow onions to the pan with the ground chicken and stir to combine.

Once the ground chicken is fully cooked, add marinara sauce, basil pesto, salt, and pepper. Stir to coat the chicken completely in the sauce.

Reduce the heat to low. Add shredded Parmesan cheese and stir well. Let the mixture continue cooking over low heat.

Lay brioche buns in a single layer on a baking sheet. Spread garlic margarine or butter on the buns.

Place the baking sheet in the oven and toast the buns for 5 minutes.

Spoon the sloppy joe mixture onto the bottom brioche buns. Sprinkle shredded mozzarella cheese on top and cover with the top buns.
