Chicken Parmesan Sloppy Joes (Print Version)

Ground chicken in marinara and pesto, topped with mozzarella, served on garlic butter brioche buns.

01 - 1 lb lean ground chicken
02 - 1 cup diced yellow onion
03 - 24 oz marinara sauce
04 - 2 tablespoons basil pesto
05 - 1 teaspoon salt
06 - 1 teaspoon pepper
07 - ⅓ cup shredded Parmesan cheese
08 - 4 brioche buns
09 - ¼ cup garlic margarine or butter
10 - 1 cup shredded mozzarella cheese

# Steps:

01 - Preheat oven to 400°F for toasting the buns.
02 - Heat a large sauté pan over medium-high heat. Add the lean ground chicken and crumble it as it cooks.
03 - Add diced yellow onions to the pan with the ground chicken and stir to combine.
04 - Once the ground chicken is fully cooked, add marinara sauce, basil pesto, salt, and pepper. Stir to coat the chicken completely in the sauce.
05 - Reduce the heat to low. Add shredded Parmesan cheese and stir well. Let the mixture continue cooking over low heat.
06 - Lay brioche buns in a single layer on a baking sheet. Spread garlic margarine or butter on the buns.
07 - Place the baking sheet in the oven and toast the buns for 5 minutes.
08 - Spoon the sloppy joe mixture onto the bottom brioche buns. Sprinkle shredded mozzarella cheese on top and cover with the top buns.
09 - Serve and enjoy!
