Pineapple Chicken Rice (Print Version)

A one-pan mix of tender chicken, pineapple, and fluffy rice, done in 40 minutes. Great for easy weeknight meals.

# Ingredients:

→ Fruits & Proteins

01 - 1 cup of pineapple chunks
02 - 1 pound cubed chicken breast

→ Veggies

03 - 1 red bell pepper, diced up
04 - 2 minced garlic cloves
05 - 1/4 cup chopped green onions
06 - 1 grated teaspoon of ginger
07 - 1 onion, finely chopped

→ Staples

08 - 1 tablespoon olive oil
09 - 1 tablespoon sesame seeds on top
10 - 1 cup of jasmine rice
11 - 1 tablespoon of soy sauce
12 - 2 cups of broth made from chicken
13 - Add salt and black pepper as needed

# Steps:

01 - Pour olive oil into a big skillet and warm it up on medium. Toss in the chicken cubes and cook until they look golden.
02 - Throw onion, garlic, and red pepper onto the skillet and stir until soft. Add pineapple, cooking for just a couple of minutes.
03 - Stir in the rice, broth, soy sauce, ginger, salt, and pepper. Let it boil, then lower the heat. Cover it up and let it simmer for 18–20 minutes.
04 - Put the cooked chicken back in. Mix it all around. Garnish with sesame seeds and green onions before serving.
