Cauliflower Chicken Soup (Print Version)

# Ingredients:

→ Base

01 - 1 carrot, diced up
02 - 1 small onion, finely chopped
03 - 2 garlic cloves, smashed or minced
04 - 1 1/2 tablespoons fresh ginger, grated
05 - 8 oz cooked chicken breast
06 - 2 1/2 cups bite-sized cauliflower pieces

→ Seasonings

07 - 1 teaspoon dried mint
08 - A couple of pinches of salt
09 - 1/2 teaspoon turmeric powder
10 - 1/2 teaspoon ground black pepper
11 - 2 tablespoons olive oil for cooking

# Instructions:

01 - In a pan, heat up some olive oil. Toss in the onion, garlic, black pepper, and turmeric, and cook for a couple of minutes, stirring occasionally.
02 - Pour in 2 cups of liquid (broth works great) and add the cauliflower. Cover it up and let it steam for 7 minutes.
03 - Add the ginger, mint, and carrot, then let it cook for another 5 minutes until tender. Blend some of the soup lightly with a hand blender if you'd like.
04 - Toss in the cooked chicken, seasonings, and the rest of your broth. Let it simmer for 5-6 minutes. Drizzle some extra olive oil on top if you'd like.
