Chickpea Cookie Bites (Print Version)

# Ingredients:

01 - 1/4 cup mini chocolate chips
02 - 1 teaspoon vanilla extract
03 - 1/2 cup whole oats
04 - 1/4 cup maple syrup
05 - 15.5 ounces garbanzo beans (chickpeas), dried and drained
06 - 1/2 teaspoon salt

# Instructions:

01 - Toss the chickpeas into a food processor and blitz them for about a minute. They should look crumb-like.
02 - Add the oats to your processor and go for another minute of blending.
03 - Pour in the syrup, vanilla, and salt, then process it all until it's creamy and smooth.
04 - Scoop it into a bowl and gently stir in your chocolate chips.
05 - Shape the mix into small balls, about a tablespoon each.
