Chili Garlic Udon Noodles (Print Version)

Udon noodles tossed in garlic chili oil with soy, ginger, sesame, and topped with a fried egg.

# Ingredients:

01 - 300 g udon noodles
02 - 2 cloves garlic
03 - 1 thumb-sized piece of fresh ginger
04 - Pinch of salt
05 - 1 tbsp chili oil
06 - 1 tsp chili flakes
07 - 1 tbsp soy sauce
08 - 1 tbsp dark rice vinegar
09 - 1 tbsp white sesame seeds
10 - 4 tbsp granola or peanut oil
11 - 1 tsp pure sesame oil
12 - 1 egg

13 - 1 tbsp sliced spring onion greens
14 - 1 tsp black sesame seeds

# Steps:

01 - Finely mince the garlic and fresh ginger and place into a medium heatproof bowl. Add chili oil, chili flakes, salt, and white sesame seeds.
02 - In a small saucepan, heat up the granola or peanut oil until it begins to smoke. Carefully pour the hot oil over the ingredients in the bowl.
03 - Add soy sauce, dark rice vinegar, and pure sesame oil to the bowl. Mix well.
04 - Cook the udon noodles in boiling water until softened. Drain thoroughly and add the noodles to the garlic chili oil mixture.
05 - Mix the noodles thoroughly with the sauce. Garnish with a fried egg, sliced spring onion greens, and black sesame seeds before serving.
