In a small saucepan, heat up the granola or peanut oil until it begins to smoke. Carefully pour the hot oil over the ingredients in the bowl.

Add soy sauce, dark rice vinegar, and pure sesame oil to the bowl. Mix well.

Cook the udon noodles in boiling water until softened. Drain thoroughly and add the noodles to the garlic chili oil mixture.

Mix the noodles thoroughly with the sauce. Garnish with a fried egg, sliced spring onion greens, and black sesame seeds before serving.
