Chocolate Chip Vanilla Custard Brioches (Print Version)

Buttery brioche dough envelops vanilla custard with chocolate chips for a Parisian-style pastry treat.

# Ingredients:

→ Brioche Dough

01 - 450g all-purpose flour
02 - 50g granulated sugar
03 - 2 ¼ tsp active dry yeast (1 standard packet)
04 - ½ tsp salt
05 - 120ml warm milk
06 - 2 eggs
07 - 115g unsalted butter, softened

→ Vanilla Custard (Pastry Cream)

08 - 240ml whole milk
09 - 2 egg yolks
10 - 50g granulated sugar
11 - 2 tbsp cornstarch
12 - 1 tsp vanilla extract
13 - 1 tbsp unsalted butter

→ Filling

14 - 90g chocolate chips

→ Egg Wash

15 - 1 egg
16 - 1 tbsp milk

# Steps:

01 - Combine warm milk and yeast in a small bowl. Let sit for 5-10 minutes until foamy. In a large mixing bowl, mix flour, sugar, and salt. Add eggs and yeast mixture to dry ingredients and mix until a sticky dough forms. Knead manually or with a stand mixer, gradually incorporating softened butter. Knead for 10 minutes until the dough is soft and elastic. Place dough in a greased bowl, cover, and let rise in a warm place for 1½ to 2 hours until doubled in size.
02 - Heat milk in a saucepan over medium heat until steaming but not boiling. In a separate bowl, whisk egg yolks, sugar, and cornstarch until smooth. Slowly pour a small amount of warm milk into the egg mixture while whisking. Return the mixture to the saucepan and cook over medium heat while stirring until thickened. Remove from heat, add butter and vanilla, mix well, and cover with plastic wrap directly touching the surface. Let cool completely.
03 - Roll the risen dough on a floured surface into a rectangle approximately 30x40 cm (12x16 inches). Spread the cooled custard evenly over half of the rectangle, then sprinkle chocolate chips over the custard layer. Fold the dough in half lengthwise, enclosing the custard and chocolate. Slice into 8-10 strips using a sharp knife or pastry cutter. Place strips onto a parchment-lined baking sheet, leaving space between each. Cover lightly with a towel and let rise for 30-45 minutes.
04 - Preheat oven to 175°C (350°F). Beat egg and milk together and brush over the tops of the pastries. Bake for 15-18 minutes until puffed and golden brown. Allow to cool slightly before serving.
