Cottage Cheese Bread (Print Version)

These soft, cheesy flatbreads use cottage cheese and almond flour — they're gluten free and super handy on a keto or low-carb plan.

# Ingredients:

→ Base Ingredients

01 - 1½ cups almond flour
02 - 2 large eggs
03 - 1 cup cottage cheese (use full-fat or low-fat)
04 - 1 teaspoon baking powder

→ Seasonings

05 - Salt and pepper, add as much as you like
06 - ¼ teaspoon onion powder
07 - Fresh herbs for topping (grab them if you want)
08 - 1 tablespoon olive oil (plus a bit more for frying)
09 - ¼ teaspoon garlic powder

# Steps:

01 - Keep scooping and cooking the rest of your batter, put in extra oil as you go. Sprinkle herbs on top, serve while they're still hot
02 - Drop about a quarter cup of batter in the pan, gently flatten it out. Let each side get golden, roughly 3 to 4 minutes before flipping
03 - Let your non-stick skillet warm up on medium. Swirl in a splash of olive oil
04 - Beat eggs with cottage cheese till smooth. Toss in baking powder, seasonings, and almond flour. Mix until you've got a thick batter
