Cottage Cheese Peanut Bark (Print Version)

Smooth cottage cheese, peanut butter, jam, and granola combine for a frozen, swirled dairy treat.

# Ingredients:

→ Base

01 - 32 oz cottage cheese
02 - 6 tablespoons honey

→ Toppings

03 - 1/2 cup smooth peanut butter
04 - 1/2 cup raspberry jam
05 - 1/2 cup granola

# Steps:

01 - In a food processor or blender, blend cottage cheese and honey until smooth.
02 - In a small heatproof bowl, microwave peanut butter in 10-second increments, stirring between each, until melted, about 20 seconds total.
03 - Spread cottage cheese mixture onto a parchment-lined baking sheet. Using a spoon, pour alternating lines of jam and melted peanut butter crosswise on top of the cottage cheese mixture. Using a toothpick or the back of a fork, swirl peanut butter and jam lengthwise. Sprinkle granola over the top.
04 - Freeze until set, at least 2 hours or up to overnight. Cut bark into squares or break into pieces.
