Cream Cheese Cranberry (Print Version)

# Ingredients:

→ Bread

01 - 1½ cups (300g) granulated sugar
02 - 8 ounces (227g) cream cheese, softened
03 - 2 teaspoons baking soda
04 - 2 teaspoons orange zest
05 - ⅓ cup milk
06 - 3 large eggs
07 - ½ teaspoon salt
08 - 3 cups (375g) all-purpose flour
09 - ½ cup (114g) butter, softened
10 - 2 cups (200g) fresh or frozen cranberries
11 - 2 teaspoons vanilla extract

→ Orange Glaze

12 - ½ teaspoon vanilla extract
13 - 2 tablespoons orange juice
14 - 1 cup (120g) powdered sugar

# Instructions:

01 - Heat your oven to 350°F and coat two 8x5-inch loaf pans with spray to prevent sticking.
02 - Stir together salt, flour, and baking soda in a medium bowl using a whisk.
03 - Put softened butter, sugar, and cream cheese into a mixing bowl. Beat on high for a couple of minutes. Throw in eggs, milk, orange zest, and vanilla next.
04 - Add the dry mixture into the wet one on low speed, mixing just until blended. Gently fold in cranberries.
05 - Spread the batter evenly into the pans. Bake for about 50-60 minutes—check with a toothpick; it should come out without batter. Let cool fully before moving on.
06 - Blend together powdered sugar, orange juice, and vanilla until silky. Drizzle this over the cooled bread.

# Notes:

01 - You can adapt the recipe for mini loaves (bake for 25-35 min) or muffins (20-22 min).
02 - Keep it whole until you’re ready to serve so it stays moist.
