Apple Cheesecake Crumbles (Print Version)

A creamy cheesecake with a buttery crust, dreamy filling, and spiced apple crumb topping for that cozy fall feeling.

# Ingredients:

01 - CRUMB BASE.
02 - 200 g graham crackers or digestive biscuits.
03 - 1.5 teaspoons of ground cinnamon.
04 - ½ tsp nutmeg powder.
05 - 1.5 tablespoons brown sugar, packed.
06 - 50 g melted butter.
07 - TOPPING & FRUIT.
08 - 150 g small-chopped apple.
09 - 1 tsp cinnamon and 1 tbsp sugar, mixed.
10 - 100 g plain flour.
11 - 80 g packed brown sugar.
12 - 70 g softened butter.
13 - FILLING.
14 - 600 g softened cream cheese.
15 - 200 g white sugar.
16 - 150 g sour cream at room temp.
17 - 1 tbsp cornstarch.
18 - 2 tsp vanilla.
19 - 3 big eggs, room temp.

# Steps:

01 - Crush cookies, mix spices and sugar, then combine with butter. Push into pan, bake for 10 minutes.
02 - Combine apples with the cinnamon sugar mix. Mix flour, sugar, and soft butter to make crumbs.
03 - Whisk cream cheese and sugar. Add sour cream, then mix in eggs gently one by one.
04 - Spoon filling onto the crust, add apples over it, and sprinkle with crumble topping.
05 - Set pan in a water bath, bake 80-90 minutes at 160°C. Look for the center to be slightly jiggly.
06 - Leave in oven an hour to cool slowly, then an hour out of the oven, and chill for 6+ hours.
