Quick Sausage Tortellini Soup (Print Version)

# Ingredients:

01 - A pound of Italian sausage, ground
02 - One small onion, chopped finely
03 - Three garlic cloves, crushed
04 - Three tablespoons all-purpose flour

→ Spices and Flavors

05 - A teaspoon of basil, dried
06 - Half a teaspoon of oregano
07 - A small pinch of cayenne pepper
08 - A teaspoon of your favorite hot sauce
09 - Half a teaspoon mustard powder
10 - Quarter teaspoon black pepper
11 - Tiny pinch of crushed chili flakes

→ Liquids and Extras

12 - One cup thick, heavy cream
13 - Five cups chicken stock
14 - Two cups of roughly chopped kale
15 - Ten ounces (2 cups) cheese-filled tortellini

# Steps:

01 - Cook the sausage and onion together for 8–10 minutes until done, then remove any grease. Toss in garlic and cook briefly for another minute.
02 - Stir in the flour and cook for a couple of minutes. Mix in the spices and combine well.
03 - Add the stock and cream while stirring. Let it boil, then lower the heat to simmer.
04 - Mix in the kale and tortellini. Let it simmer for 3–5 minutes, until the pasta is done. Add salt if needed.
