Tomato Spinach Pasta (Print Version)

# Ingredients:

→ Pasta

01 - 8 ounces of penne noodles

→ Sauce Base

02 - One can of diced tomatoes (15 oz)
03 - 1 diced yellow onion
04 - 2 minced garlic cloves
05 - 2 tablespoons of tomato paste
06 - 1 tablespoon of olive oil

→ Seasonings

07 - A half teaspoon of dried oregano
08 - A pinch of red pepper flakes, optional
09 - A half teaspoon of dried basil
10 - Salt, about half a teaspoon
11 - Fresh black pepper, add to your taste

→ Creamy Elements

12 - 2 ounces of cream cheese
13 - 1/4 cup of Parmesan cheese, grated

→ Vegetables

14 - 4 ounces of fresh spinach

# Instructions:

01 - In a big pot, cook the pasta until it's tender—takes about 7 to 10 minutes. Drain it in a colander.
02 - In a skillet over medium heat, sauté onion and garlic in olive oil for 3 to 5 minutes until soft.
03 - Mix in the diced tomatoes, tomato paste, your herbs, and a half cup of water. Give it a good mix to combine everything.
04 - Turn the heat way down and add cream cheese chunks. Stir until they melt, then mix in Parmesan until the sauce is smooth.
05 - Throw in the spinach and let it cook until it wilts, which takes 2 to 3 minutes.
06 - Mix the pasta with your sauce. Taste it, adjust the seasonings, and then you’re good to go!
