Air Fryer Tso's Chicken (Print Version)

# Ingredients:

01 - 2 tablespoons soy sauce for the marinade.
02 - 1 teaspoon diced garlic for the marinade.
03 - 1 teaspoon diced ginger for the marinade.
04 - 1 teaspoon rice vinegar for the marinade.
05 - 1 pound chicken thighs, chopped small.
06 - 1/2 cup chicken stock.
07 - 2 teaspoons brown sugar.
08 - 2 teaspoons rice vinegar for the sauce.
09 - 2 teaspoons cornstarch for the sauce.
10 - 1 beaten egg for coating the chicken.
11 - 1 teaspoon chili flakes.
12 - 1 teaspoon diced ginger for the sauce.
13 - 1 teaspoon diced garlic for the sauce.
14 - 2 tablespoons soy sauce for the sauce.
15 - 2 tablespoons ketchup.
16 - 2/3 cup of cornstarch for coating.
17 - 2 tablespoons of cooking oil.

# Instructions:

01 - Stir chicken with vinegar, soy sauce, garlic, and ginger. Leave it alone for half an hour.
02 - Set fryer to 400°F and run it empty for 5 minutes. Rub oil on the basket.
03 - Cover the meat in egg first, then roll it in cornstarch. Get rid of any extra powder.
04 - Lay chicken pieces in the fryer, don't layer too much. Fry at 400°F for about 12 to 16 minutes. Make sure it's cooked through to 165°F.
05 - Combine ketchup, soy sauce, stock, sugar, vinegar, and cornstarch in a bowl. Heat oil, then quickly cook ginger, garlic, and chili until how it smells changes. Stir in sauce mix and let it thicken.
06 - Mix the chicken with the sauce really well so it soaks in. Sprinkle some green onions and sesame seeds on top if you'd like.

# Notes:

01 - To keep the fryer from being crowded, cook the chicken in smaller patches.
02 - If you want sweeter sauce, toss in more sugar to taste.
03 - Want more sauce? Make double the amount so there's extra to go around.
