Bang Bang Tenders (Print Version)

Sweet and spicy chicken bites, coated in crispy panko breadcrumbs.

# Ingredients:

→ Sauce for Topping

01 - ½ cup Thai chili sauce (sweet)
02 - 1 teaspoon Sriracha for heat
03 - 2 tablespoons honey for sweetness
04 - 1 cup mayo

→ Chicken Crust

05 - ¾ cup plain flour
06 - 2 cups panko crumbs
07 - 1 ½ pounds tender chicken pieces
08 - ½ cup cornstarch for crispiness
09 - 1 large egg, whisked
10 - 1 tablespoon Sriracha, optional
11 - 1 cup buttermilk

→ Spices

12 - ¼ teaspoon ground black pepper
13 - ½ teaspoon powder made from garlic
14 - ⅛ teaspoon cayenne for spice (optional)
15 - ½ teaspoon kosher salt or sea salt

# Steps:

01 - Stir together mayo, chili sauce, honey, and Sriracha. Leave it on the side.
02 - Whisk buttermilk, cornstarch, flour, seasonings, Sriracha, and your egg. Dunk the chicken in this mixture.
03 - Roll the coated chicken in panko crumbs, pressing down so it sticks well.
04 - Warm oil to 365°F and fry chicken for a couple of minutes each side till it’s cooked through (165°F inside).
05 - Put chicken on paper towels to drain. Cover with sauce and sprinkle parsley on top.
