# Ingredients:

01 - Cooking spray
02 - 4 oz pork rinds
03 - 1 cup freshly grated Parmesan
04 - 1 large egg
05 - 2 Tbsp mayonnaise
06 - 2 Tbsp water
07 - Kosher salt
08 - Freshly ground black pepper
09 - 1 lb boneless skinless chicken breasts, cut into strips

→ FOR THE WAFFLES

10 - 4 large eggs
11 - 2 cups almond flour
12 - 1 cup shredded cheddar
13 - 1 cup milk
14 - 1 cup sour cream
15 - 1 tsp baking powder
16 - Kosher salt
17 - Freshly ground black pepper
18 - Cooking spray
19 - 2 Tbsp freshly chopped chives, for garnish
20 - Butter, optional

# Steps:

01 - Preheat oven to 425°F. Line a baking sheet with parchment paper and grease generously with cooking spray. Add pork rinds to a food processor and pulse until fine crumbs form. Transfer to a shallow dish and combine with Parmesan.
02 - In a medium bowl, whisk together egg, mayonnaise, and water. Season with salt and pepper.
03 - Dip chicken pieces in egg mixture, letting excess liquid drip off. Coat chicken in pork-rind mixture, pressing to adhere, and place on the prepared baking sheet.
04 - Bake chicken until golden, about 25 to 30 minutes.
05 - Preheat a waffle iron. In a large bowl, whisk eggs, then whisk in almond flour, cheddar, milk, sour cream, and baking powder. Season with salt and pepper.
06 - Grease waffle iron with cooking spray. Following waffle maker directions, add 1/2 cup batter and cook until golden, about 4 to 5 minutes. Repeat with remaining batter.
07 - Serve chicken tenders with waffles. Garnish with freshly chopped chives and butter if desired.
