# Ingredients:

01 - 1 cup bean sprouts
02 - ½ pound cooked shrimp, chopped
03 - 4 eggs, beaten
04 - ½ cup mushrooms, chopped
05 - ½ cup onion, chopped

→ Sauce and Seasonings

06 - 1 teaspoon cornstarch
07 - 2 tablespoons soy sauce
08 - Oil for cooking

→ For Serving

09 - Green onions for sprinkling
10 - Prepared beef gravy

# Instructions:

01 - Grab a large pan, warm up some oil, then toss in the onions, mushrooms, and bean sprouts. Stir them around until softened. Add the shrimp once the veggies look good.
02 - Mix in soy sauce and cornstarch. Stir until everything blends well.
03 - Pour the veggie mix into a bowl with the eggs. Stir gently so they combine, keeping the texture mostly veggies with just enough egg.
04 - Heat up a clean pan with some oil. Scoop out a portion of the batter (around a quarter of it), shape it like a pancake, and cook until solid enough to flip. Cook the other side until both sides are golden and set.
05 - Set patties on some paper towels to soak up extra oil. Spoon gravy on top, sprinkle with green onions, and serve with soy sauce if you'd like.
