01 - 2-3 pounds chuck roast or similar cut
02 - 1 tablespoon canola oil
03 - 2 cups low-sodium beef broth or water
04 - 2 teaspoons Worcestershire sauce or soy sauce
05 - 1 medium onion, chopped
06 - 2 cloves garlic or 1 teaspoon garlic powder
07 - 1 tablespoon Italian seasoning
08 - 1 pound egg noodles (dried, fresh, or frozen)
09 - 1 cup mushrooms, sliced (optional)
10 - Salt and pepper, to taste
11 - ½ cup heavy cream or 1 tablespoon cornstarch mixed with 1 tablespoon water (optional)

# Steps:

01 - Place a skillet over medium-high heat. When hot, add 1 tablespoon of canola oil and the beef. Fry for 1-2 minutes per side until slightly browned.
02 - Place the beef in the crock pot along with the beef broth, onion, garlic, Worcestershire sauce, and Italian seasoning. Seal the lid and cook for 6-7 hours on Low or 4 hours on High, or until the meat is tender.
03 - Use two forks to shred the beef into bite-sized pieces in the crock pot. Season with salt and pepper to taste.
04 - Add the noodles to the crock pot. Cover and cook on High for 10-20 minutes until al dente. Note: the time will vary based on the type of noodles used.
05 - To thicken the gravy, stir in the heavy cream or cornstarch slurry. Let it bubble for a few minutes until thickened. Serve warm.
