Croque Madame Savory Waffles (Print Version)

Crisp waffles with ham, gruyere, bechamel sauce, and eggs create a delicious French-inspired brunch.

# Ingredients:

01 - 4 tablespoons butter
02 - 4 tablespoons all-purpose flour
03 - 2 cups whole milk
04 - 2 tablespoons Dijon mustard

→ Waffles

05 - 2 cups all-purpose flour
06 - 3 teaspoons baking powder
07 - ¼ teaspoon salt
08 - 2 eggs, lightly beaten
09 - 1¾ cup whole milk
10 - ¼ cup butter, melted
11 - 1 cup shaved ham, diced
12 - 1 cup Gruyere cheese, shredded

→ Assembly

13 - 18-24 slices shaved ham
14 - 1 cup Gruyere cheese, shredded
15 - 6 eggs, poached or fried
16 - Salt and pepper, to taste
17 - Chives, chopped (optional for serving)

# Steps:

01 - In a small saucepan, melt butter over medium-low heat. Whisk in flour and cook for 2 minutes, stirring frequently. Gradually add milk, whisking constantly to avoid lumps. Continue cooking and stirring until thickened. Remove from heat and stir in Dijon mustard. Season with salt and pepper to taste.
02 - In a large bowl, combine flour, baking powder, and salt. Mix in beaten eggs, milk, and melted butter until just combined. Gently fold in diced ham and shredded Gruyere cheese.
03 - Preheat and grease a waffle maker. Scoop ¾ cup of batter onto the waffle maker, close, and cook until golden brown.
04 - Place cooked waffles on a parchment-lined baking sheet. Top each waffle with ⅙ of the prepared Bechamel sauce. Add 3-4 slices of shaved ham and sprinkle with additional shredded Gruyere cheese.
05 - Broil the waffles until the cheese is melted and the Bechamel is bubbly. Transfer to serving plates and top each waffle with a fried or poached egg. Garnish with chopped chives if desired.
