Toss the oats, M&Ms, and chocolate pieces in a medium-sized bowl.

In another small bowl, whisk the honey and peanut butter until it's creamy. Stir in vanilla and salt if you'd like.

Pour the wet mix over the dry and stir everything until it clumps together and sticks when squished.

With clean hands, shape small one-inch balls. If it's too sticky to handle, pop it in the fridge for 10 minutes first.

For an extra touch, roll the balls in coconut shreds for a light coating.
