# Ingredients:

→ Spread Mixture

01 - 2 tbsp honey
02 - 2 tbsp smooth dijon mustard
03 - 2 tbsp salted butter

→ Sandwich Components

04 - A pound of sliced deli-style ham (about 1/2 lb)
05 - 8 strips of crispy cooked bacon
06 - 8 pieces of cheese (cheddar, swiss, gouda, or others)
07 - 4 big croissants, split in half

→ Egg Topping

08 - 5 large eggs
09 - Milk splash for fluffiness
10 - Pinch of salt and some black pepper
11 - 1 tbsp butter, melted
12 - Optional: chopped chives for the top

# Instructions:

01 - Turn your oven to 350°F to preheat.
02 - Mix mustard, honey, and butter in a small bowl. Heat it in the microwave for around 20 seconds, just until the butter melts. Stir to blend.
03 - Carefully cut croissants horizontally using a serrated blade. Spread the honey mustard butter on the insides.
04 - Start with the bottom part of the croissant. Layer on some cheese, slices of ham, and crispy bacon. Top it with another cheese slice. Put the top piece of the croissant back on and lay them all on your baking pan.
05 - Pop them into the oven and bake for 10-15 minutes till the croissants get golden and the cheese is gooey.
06 - As the croissants are toasting, whisk eggs with milk, salt, and pepper together. Heat butter in a nonstick pan on medium. Cook the eggs, gently stirring, until they’re almost set—about 2-3 minutes.
07 - Take the croissants out. Spoon some scrambled eggs onto each sandwich, and sprinkle fresh chives on top if you like.
