In a shallow medium bowl, toss together the cinnamon and sugar mix. Keep it nearby for later.

Over medium heat, add water, milk, vanilla, butter, salt, sugar, and cinnamon to a saucepan. Keep stirring as it comes to a rolling boil. Once boiling, lower the heat.

Stir the flour into the warm mix, nonstop, until a single dough ball forms and dries out a bit (2-3 minutes).

Move the dough to a big bowl. With a hand mixer, beat it for 2 minutes to cool it off. Crack in eggs one by one, mixing thoroughly between each, until the dough smooths and fluffs up.

Heat 2 inches of oil to 360°F in a large pot. Squeeze out 3-inch dough strips using a star-tipped piping bag directly into the oil. Fry till golden, about 1.5 minutes per side, and monitor the temperature (aim for 350-370°F).

Quickly drain on paper towels, then toss the fried churros in your cinnamon-sugar combo. Eat immediately, dipping in chocolate sauce if you like.
