Heat vegetable oil in a large pan or wok. If using a wok, allow the oil to smoke briefly. If using a regular pan, skip smoking the oil.

Pour in beaten eggs. Quickly stir-fry the eggs until they start to take shape.

Once the eggs take shape but remain moist, quickly toss in the rice. Break apart any clumped rice directly in the pan.

Move everything to the side of the pan, adding the remaining oil into the empty space. Add green onions, then mix green onions into the rice and eggs.

Add soy sauce and sesame oil along the edges of the pan. Toss everything together until the grains are evenly coated and turn brown. Remove from heat.

Serve hot and enjoy the dish while it's still warm.
