Easy 15-min Panda Express Chow Mein (Print Version)

Savory noodles stir fried with veggies and sauce, ready in just 15 minutes. A satisfying side, quick and flavorful.

# Ingredients:

01 - 1 lb fresh chow mein noodles
02 - 2 cups cabbage, thinly sliced
03 - 1 cup celery, sliced
04 - 1 small onion, sliced
05 - 2 tablespoons vegetable oil or neutral oil

→ Noodle Sauce

06 - 2 tablespoons regular soy sauce
07 - ½ tablespoon dark soy sauce
08 - 2 tablespoons oyster sauce or vegetarian stir fry sauce
09 - 1 tablespoon sesame oil
10 - 2 garlic cloves, minced
11 - ¼ cup low-sodium chicken stock or cold water
12 - ½ tablespoon cornstarch or potato starch

# Steps:

01 - In a small bowl, combine the noodle sauce ingredients and set aside.
02 - Bring a large pan filled halfway with water to boil on medium-high heat. Blanch chow mein noodles for 20-30 seconds or until loosened.
03 - Strain the noodles in a colander and set aside. Do not rinse off with water.
04 - Heat 1 tablespoon (15 ml) vegetable oil in a large pan. Fry onions, cabbage, and celery until softened, about 1 minute.
05 - Push the vegetables to the side of the pan. Add the remaining oil into the empty space and stir in noodles and sauce.
06 - Toss everything together until noodles are coated in the sauce. Remove from heat and enjoy.

01 - Avoid rinsing the noodles after blanching to retain their texture.
