# Ingredients:

→ Base

01 - 1 (3-ounce) pack of dry instant ramen noodles; discard the seasoning packet

→ Peanut Sauce

02 - 2 tablespoons natural unsweetened peanut butter, creamy
03 - ½ tablespoon rich dark soy sauce
04 - ½ teaspoon powdered garlic
05 - 1 tablespoon sriracha (adjust for spiciness)
06 - 1 tablespoon honey or maple syrup, your choice
07 - A teaspoon of freshly squeezed lemon juice
08 - Salt, as needed
09 - ½ teaspoon sesame oil, toasted for extra flavor

→ Garnish

10 - 1 chopped green onion
11 - 1 tablespoon crushed peanuts, toasted
12 - Optional: chopped fresh red chili

# Steps:

01 - Cook the dry ramen noodles until they're firm but tender. Save ¼ cup of the cooking water, then drain the noodles and toss the packet.
02 - Stir together peanut butter, sriracha, soy sauce, garlic, honey, lemon juice, salt, sesame oil, and the ¼ cup of warm noodle water until all smooth.
03 - Taste the sauce and tweak the flavors if something feels off.
04 - Mix the drained noodles with the sauce, then toss in some green onions and peanuts. Stir until evenly coated.
05 - Top with more green onions, peanuts, and a bit of chili if you want extra heat.
