02 - ½ cup plain Greek yogurt
03 - 1 tablespoon fresh lemon juice
04 - 1 clove garlic, chopped
05 - 1 tablespoon freshly chopped parsley, plus more for garnish

→ Salmon Patties

06 - 16 ounces cooked salmon or 1 14.75-ounce can salmon
07 - 2 large eggs, lightly beaten
08 - ½ cup chopped onion
09 - ⅔ cup fine almond flour
10 - ¼ cup chopped fresh parsley
11 - 2 cloves garlic, chopped
12 - 2 tablespoons fresh lemon juice
13 - ⅛ teaspoon sea salt, more or less to taste
14 - ⅛ teaspoon freshly cracked black pepper, more or less to taste
15 - Neutral oil, approximately 2-4 tablespoons as needed

# Steps:

01 - Add mayonnaise, Greek yogurt, lemon juice, garlic, and parsley to a small mixing bowl. Stir together until well combined. Cover and refrigerate until ready to serve.
02 - Using a fork, flake the salmon into a medium mixing bowl. Add eggs, onion, almond flour, parsley, garlic, lemon juice, salt, and pepper. Mix until fully combined.
03 - Scoop 2-ounce portions of the salmon mixture using a disher or cookie scoop. Roll into smooth balls, then gently flatten into evenly thick patties. Place patties on parchment paper.
04 - Heat a large skillet over medium heat. Add 1 tablespoon oil and heat until shimmering. Place patties in the skillet without overcrowding and cook for 5-6 minutes on one side until golden brown. Flip and cook for another 5 minutes until golden on both sides. Remove and place on a paper towel-lined plate. Repeat with remaining patties, adding oil as needed.
05 - Transfer cooked patties to serving plates. Spoon the prepared lemon-garlic sauce over the patties. Garnish with parsley and serve with lemon wedges.
