Easy Shepherd's Pie (Print Version)

Hearty layers of beef, veggies, and soft mashed potatoes for a warm, filling bite.

# Ingredients:

→ Meat Filling

01 - 2 cups frozen mixed veggies
02 - 1 tablespoon Worcestershire sauce
03 - 1 cup beef stock
04 - 2 tablespoons all-purpose flour
05 - 2 tablespoons butter or margarine
06 - 1 medium onion, diced
07 - 2 tablespoons thick tomato puree
08 - 1 pound minced beef or lamb, lean

→ Potato Topping

09 - 3 cloves fresh garlic
10 - 1/4 cup unsalted butter
11 - 1/2 cup rich cream
12 - 2.5 pounds Russet potatoes, peeled

→ Seasonings

13 - Salt, about 1/2 teaspoon
14 - A sprinkle of pepper, as you like
15 - 1/2 teaspoon mixed Italian herbs

# Steps:

01 - Boil potatoes till soft. Set oven to 375°F and adjust rack high.
02 - Sauté onion and beef, then mix in seasonings and tomato puree. Stir in broth, flour, and frozen vegetables.
03 - While hot, mash potatoes with melted butter, cream, and crushed garlic.
04 - Spread the cooked filling into a 9x13 pan. Pile mashed potatoes on top, then rough them up with a fork.
05 - Put in the oven for 30 minutes. Broil the top for a bit to brown. Cool before digging in.
