Fajita Rice Bowl Meal (Print Version)

A flavorful one-pan dish featuring seasoned chicken, rice, black beans, and peppers with a Tex-Mex twist.

# Ingredients:

→ Protein & Vegetables

01 - 3 cups bell peppers, chopped
02 - 1 cup yellow onion, diced small
03 - 3 minced garlic cloves
04 - 1 1/4 lbs diced chicken breast

→ Base

05 - 1 can (15 oz) fire-roasted tomatoes
06 - 1 can (15 oz) black beans, drained well
07 - 1 2/3 cups chicken broth (low-sodium)
08 - 2 cups quick-cooking brown rice

→ Seasonings

09 - 2 1/2 teaspoons chili powder
10 - 1 1/2 tablespoons fresh lime juice
11 - 1 1/2 teaspoons ground cumin
12 - Salt and black pepper as needed
13 - 2 1/2 tablespoons olive oil

→ Toppings

14 - 1/3 cup chopped fresh cilantro
15 - 3/4 cup Mexican cheese, shredded finely

# Steps:

01 - Season chicken, cook in hot oil for about 7 minutes until done. Put it in foil to keep it warm.
02 - Start with the onions for 3 minutes, add peppers for another 3, then toss in garlic for 1 minute.
03 - Pour in broth, beans, tomatoes, and seasonings. Let it all boil together.
04 - Mix in the rice, cover it up, and let it cook for 6 to 7 minutes. Let it sit off the heat for 5 minutes.
05 - Combine the chicken, lime juice, cheese, and cilantro, then mix it all gently.
