5 Ingredient Beef Enchiladas (Print Version)

01 - 1 pound lean ground beef
02 - 1 cup chunky salsa
03 - 1 (10-ounce) can red enchilada sauce
04 - 8 (8-inch) flour tortillas
05 - 1 (8-ounce) package shredded four cheese Mexican blend (about 2 cups)

# Steps:

01 - Preheat the oven to 350°F and lightly spray a 9x13-inch baking dish with nonstick cooking spray.
02 - In a large skillet, brown the ground beef over medium-high heat. Drain the excess fat and return the meat to the skillet. Stir in the salsa and cook until heated through, then remove from heat.
03 - Pour about half of the enchilada sauce into the bottom of the prepared baking dish.
04 - Warm the tortillas according to the package instructions. Add about 1/4 cup of the meat mixture down the center of each tortilla and top with 1 heaping tablespoon of cheese. Tightly roll each tortilla and place them seam side down in the baking dish.
05 - Pour the remaining enchilada sauce over the assembled tortillas and sprinkle the remaining cheese on top.
06 - Tightly wrap the baking dish with aluminum foil and bake for 30 to 35 minutes at 350°F.
