Set your oven to 300°F (150°C). Use an electric mixer or stand mixer to beat the egg whites and vinegar at high speed until stiff peaks form—should take 10–15 minutes. Put this aside for now.

In a different bowl, combine the egg yolks, salt, baking powder, allulose (if you're using it), cottage cheese, whey powder, and egg white protein. Blend it all together until smooth, either by hand or using a blender.

Take your time folding the egg yolk mixture into the fluffy egg whites. Do this in small amounts to keep the light texture intact.

Transfer the batter into a greased loaf pan lined with parchment paper (5×9 inches). Bake in the center of the oven for 50 minutes or until the top is golden and a toothpick inserted in the middle comes out clean.

Once the baking is finished, turn off the oven but don't open the door right away. Let it sit in the oven for another 10 minutes. After that, take it out and let it cool a bit before slicing.
