Fudgy Bean Brownies (Print Version)

# Ingredients:

→ Base Ingredients

01 - 3 eggs, large in size
02 - 1 can black beans, 15 oz (425g), rinsed and drained well
03 - 1 teaspoon vanilla essence
04 - 3 tablespoons neutral-tasting oil (like vegetable or canola)

→ Dry Ingredients

05 - ½ teaspoon baking powder
06 - ¼ teaspoon salt
07 - 30g (¼ cup) cocoa powder, unsweetened
08 - 120g (⅔ cup) sugar
09 - Optional: ½ teaspoon instant or finely ground coffee

→ Add-ins

10 - 60g (½ cup) chocolate chips, semi-sweet

# Instructions:

01 - Turn the oven to 350°F (176°C) so it can heat up. Toss the beans into a food processor and blend until smooth and thick. In a big mixing bowl, stir together the pureed beans, eggs, oil, and vanilla until combined.
02 - Grab a separate bowl and mix the cocoa powder, sugar, salt, baking powder, and coffee (if you'd like to use it). Sprinkle this dry mixture into the wet mixture, then fold in the chocolate chips gently.
03 - Line an 8x8 or 9x9 inch pan with parchment and make sure to grease it. Pour the batter evenly into the pan. Bake for about 30–40 minutes, until the center is mostly solid and the edges appear done.
04 - Wait until the brownies are completely cool before slicing them into squares.

# Notes:

01 - Double the ingredients if you want thicker results
02 - Store in the fridge and they’ll stay good for about a week
03 - You can freeze them and keep them for 3 months
